Many call short bamboo skewered food Satays, Kebabs, Souvlaki or even Sashliks. But in central Italy they are called Arrosticini or mini lamb spits and these compact charcoal BBQs are ideal for grilling bamboo skewers without burning your finger tips.
It is so simple - soak 25cm bamboo skewers in water for a few hours, then skewer 1.5 cm cubed pieces of Lamb onto them. Leave the skewer tip exposed and at least 10cm of lamb along the length of the skewer. The secret to addictive lamb skewers is to layer lamb fat in between the red meat pieces, which flavours it even more during cooking
Start the charcoal on the ramp end and give it 20mins to get hot. Then spread a shallow layer of hot charcoal along the length of the BBQ. Add more charcoal on the ramp if you want to cook for longer periods.
Suspend the skewers directly over the charcoal and grill slowly. Turn each by hand and make sure you allow the lamb to brown on all sides. Allow the fat to render and the juices to drip onto the charcoal, but watch for flare ups - smoke will rise and will add that extra smoky flavour to all your skewers.
You should be able to grill 30 skewers at one time on this BBQ and they should take less than 10 minutes to cook. Sprinkle salt generously right at the end and enjoy a fist full of skewers per person.
